Perfectly Prepared Oven-Roasted Potatoes
A delicious combination of mixed potoatoes and carrots slow roasted in the oven.

- 5 medium sized white potatoes peeled and chopped
- 2 sweet potatoes peeled and chopped
- 1-2 carrots peeled and sliced
- salt and pepper to taste
- 3 tbsp vegetable oil
Preheat the oven to 380F.
Peel potatoes and cut into large cubes.
Peel and cut carrots into larger pieces, about 1" long.
Place in a lare bowl and season with salt and pepper.
Add to a roasting pan and drizzle vegetable oil over top. Cover with a lid.
Bake at 380F for 50-60 minutes until soft when pierced with a fork.
Stir potatoes an carrots occasionally while baking.
Remove the lid from pan for the last 10 minutes.
