Easy Coconut Milk Popsicles with Sprinkles

With just one ingredient and sprinkles, these coconut popsicles are a healthy and refreshing summertime treat for the whole family.

My kids are little popsicle monsters. And not just in the summer – anytime, anywhere!

Most store-bought popsicles are loaded with sugar and artificial food coloring. Every now and then we mix it up and make these delicious and refreshing popsicles with coconut milk instead. They’re about as easy as it gets – pour the coconut milk into the mold and freeze!

And for a bit more fun we add sprinkles – of course they can’t resist those! We made a set earlier this week with red sprinkles for Canada Day. We have a whole collection of last-minute Canada Day celebration ideas here.

We also have lots of red, white and blue sprinkles (they’re the colors of both the US and Croatian flags!). So these particular popsicles are perfect for celebrate both American and Croatian patriotic popsicles.

They also go great alongside our red, white and blue chocolate truffles. Top them off with a little flag, or our sparkling star printable!

Ingredients to Make Red, White and Blue Popsicles

  • 2 cups coconut milk
  • 2 tbsp sprinkles in colors of your choice

Instructions to Make 4 Popsicles with Coconut Milk

  1. Pour 1/4 tsp sprinkles into bottom of popsicle mold.
  2. Fill each mold half way with coconut milk and freeze 1-2 hrs.
  3. Remove from freezer and fill each mold with remaining coconut milk and sprinkles. Freeze 1-2 hours until set.

That’s it! Delicious, fun and refreshing popsicles.
