Homestyle Chicken Shish Kabob Recipe with Creamy Dill Dip

Easy grilled chicken shish kabobs with vegetables

With meat and veggies combined in one, and ease of preparing them ahead of time, this homestyle chicken shish kabob recipe is perfect for easy summer grilling.

Grilled Chicken Shish Kabob Recipe with Creamy Dill Dip

It was late in the afternoon earlier this week when family friends called our parents to ask if they could come for a visit the next day. “No need to prepare anything!” they emphasized. But our mom can’t help herself- if people are coming over, food needs to be involved! It always amazes us how she can easily feed over 30 people with an empty fridge and minimal pre-planning.

Well, next thing I know she’s pulled some chicken breasts out of the freezer to thaw overnight and given our dad orders to find a zucchini, peppers and some onions in the garden. Not only did that zucchini go into the chicken shish kabobs, but she used it to make her delicious quick zucchini cake with berries. Yes, they grow huge zucchinis!

The next morning we pulled out the ingredients, cut and skewered them and set them back in the fridge until it was time to BBQ. They were a big hit all around!

Serve the delicious chicken shish kabob while warm, with the dipping sauce on the side.

This year, there were fewer places set, and there's much more food left-over. We connected through Messenger, WhatsApp and phone calls and watched mass on YouTube. Definitely different.⠀

Yet it was special. I got to play cards with my parents after not being together for months. The kids savoured opening their gifts (the ones that managed to arrive on time). We got a dumping of snow, which is a wonderful sight when you have no place to go and can just watch it from the cozy indoors.⠀
